About
The Story
A tribute to Cuba and it’s cultural influences. Calle Dragones, already a success in Bogotá and Cartagena (Colombia), resembles the street in Havana that bears it’s name and collides with Calle Zanja, dividing the Chinese neighborhood from the rest of Havana.
Originally invented by Chinese migrants brought to Cuba as laborers in the 1850’s, Asian-Latin cuisine blended Chinese and Caribbean ingredients and cooking techniques. The Cuban Revolution in 1959, however, got in the way and deprived the world to meet what was meant to be today’s Cuban cuisine. Many left the island and concentrated in Miami and New York. Havana’s Chinatown is still one of the oldest and largest in the Americas.

🐲Calle Dragones pays tribute to Cuba’s Chinatown which is on the cross street of Calle Dragones and Calle Zanja which separates Havana’s Chinatown. Havana Cuba’s Chinatown is one of the OLDEST Chibatowns in the world!
Calle Dragones is Chef Pous’s interpretation of what an Asian Influenced Cuban cuisine could have looked like if Cuba had been allowed to evolve!
